In 2010 Menu and Norm Architects joined forces with Copenhagen restaurateurs Cofoco, to create something magical. A restaurant expressing everything we categorize as "Nordic". Materials, dishes, glasses, chairs, lamps, windows, moods and colours.

Today, Restaurant Höst is the elegant result of clashing romanticism with modernity and it holds a very special place in our hearts because of its many stories, mixed inspirations and the fact that it's pleasing for all senses.

Everything just fits into place to create a complex and inspiring feeling of something urban, yet rough and rural. Something rustic, yet simplistic.

To create the perfect base for this urban romance, Norm Architects designed a special series of dinnerware. It was a profound admiration of one of Denmark's most prominent painters, Vilhelm Hammershoi and the unique feel of the crisp and pristine Nordic winds, which served as the main inspiration into the colour scheme. And you will find that all colours in New Norm Dinnerware are carefully hand-picked to match and emphasize the Nordic dishes served at Höst.

Back in 2011 when MENU and Norm Architects were working on a brand new series of dinnerware, it became clear to us that a series with such a unique Nordic feel needed an equally unique base - something way out of the ordinary. So we joined forces with Copenhagen restaurateurs Cofoco and together we designed, invented and built what is today known as the World's best design restaurant: Restaurant Höst in the centre of Copenhagen. So, it all started with a plate of New Norm Dinnerware. Much like the ones you can get right here.

New Norm Dinnerware expresses the purity, simplicity, and honesty so particularly characteristic of the Nordic way. At the same time, the dinnerware reinterprets the well known and challenges the traditional ways of staging a meal. The diversity of colours and materials in New Norm Dinnerware sets the creativity free.

All New Norm Dinnerware products are produced with isostatic press technology to improve durability. The production takes place in a state of the art European factory, specialising in high-quality porcelain for restaurants and hotels. This gives your plates and bowls an exceptional durability.

All designs are colour-glazed and burned twice at 1400 degrees for maximum strength and a special glazing process gives each item a unique soft aquarelle look, and makes sure that no two plates, bowls or cups are alike. Around 100 people are involved in the process of crafting, quality controlling and caring for each piece of New Norm Dinnerware.
